In New Orleans, we look for any reason to play, eat and enjoy great music. And there is nothing like a good festival to make that happen. So in New Orleans we have festivals for everything imaginable. Now when we have a festival here, we don’t do what most places think of as “festival food” like corn dogs, hamburgers and funnel cake. We do Cochon d’lait Po-Boys, Boiled Crawfish, Fried Eggplant with shrimp in a creole sauce, white chocolate bread pudding…
